Well as for screenshots if you have the steam version they have just implemented not to long ago a snapshot program. Just hit F12 and it will save it to the screenshots folder. If you have the standalone program then you will proly just have to hit print screen and then paste it into paint.
As for the video part you should be able to use the many programs available to do just that such as Fraps.
