Why is temperature capped at 4727 C?

It abruptly stops going higher than that with natural means of heating, such as tidal or solar heating. It's a new thing too, used to be able to get higher in old versions. But it can still get higher by manually changing the temperature, only to immediately snap back to 4727 C.

IKR it's so weird. I mean it isn't capped but whenever you crash an asteroid into another body no matter what the temperature will rise up to 4727C.

I don't know how relevant this is, but 4727C is equal to 5000K. That probably has something to do with it.
