Meh, I'd say the Orion Nebula is the greatest, or at least one of the greatest.

Probably the Eskimo, or the Ring (planetary nebulae ftw!)

Ring, Eskimo and Helix nebulae are some of my favorites...
Then again, the Rosette Nebula (I have an, imo, much more beautiful pic of it in a gigantic book than the image you linked to Kipz, although that image is good too), the Orion Nebula, Red Rectangle, Hourglass Nebula, Cat's Eye Nebula, Spirograph Nebula, Crab Nebula...
Rosette Nebula (not the one in my book, but looks very good too):

Orion Nebula:

Red Rectangle:

Hourglass Nebula:

Cat's Eye Nebula:

Spirograph Nebula:

Crab Nebula:

It's hard to choose one.

I would say the Horse Head nebula as it was the first nebula I learnt about.

Orion, definitely.
They don't call it "The Great" Orion Nebula for nothing!
