They actually are, and have their own tab in the add menu, they just currently aren't all that unique to each other and look more like nebulae than galaxies, more like blobs rather than orderly, spiraled structures.

Well I mean if you don't get bored adding hundreds of billions of stars and you have a monster computer and are immortal, sure. Otherwise the best you can do is an approximation of maybe a few hundred stars, especially if you want to give each one planets.
