This one helped me a lot:

Keep the wiki open in a tab so you cann look stuff up while playing. Always use the K key to see what a tile has on it or what a symbol means. :D

when you start getting serious, see how to make a military:

How do you collect the wood? My dwarfs chop the trees, but they will not collect it. Same for berries.

Also, if someone dies, how do you collect their items?

Supplies aren't collected by individuals, but hauled to a stockpile.
They'll be left on the floor unless there's a stockpile set for that sort of material.

You can set jobs manually by pushing V, go to a dwarf, push P then L. There's a list you can navigate with the - & + keys. Enter to select.
I do this at the start to set two miners, as you start with two copper picks.

How do you switch dwarfs? (like if you do not want the fisherdwarf to mine) I remember doing it, but i forgot how.

Guys, you can remove the aquifers. Go into the dwarf fortress folder, find the text file for rock layers, open that, and remove the tags for aquifers, or just from selected layer types.

I played it a while back, but stopped since I got bored (and the lower RAM kind of held me back then. Still, its very fun and while the learning curve is steep, there is a very good community to help you out.

Anyways, DF is eXTREMELY moddable, everything but the base code is moddable.

I love dwarf fortress' moddability, it's like the Spore creature creator, but you can't see anything. Creatures are modular.
