You should be able to create a galaxy with about 5 stars with planets moons and comets. That would be cool. There should be one to make a solar system from scratch and watch the time go by...

Stars: (1-3)
Stars with planets (only for binaries and triples): (1-3)
Planets: (1-20)
Total Moons: (5-300)

Something that has been on the list for a while is an "automatic solar system" creator. Where you can adjust some presets (just like you suggested) and then click Go.

Adding accretion discs which make a solar system over time is also on the list.
