To use the models you should place the .dds (textures) .jpg (textures) and the .x (models) in the YOUR_USER\Documents\Universe Sandbox\Media folder.

Then inside the game in the TExture/Model boxes type the name of the file you want.

You are correct.  The library of planet textures seem to be missing.
