I'm constructing a horse racing track and I have only half-surveyed the land and I don't know how practical it will be, but here are some proposals for paths.
Orange -
Pros: currently completed scouting
Cons: some massive elevation changes, really large track
Notes: it exhibits the diverse biomes around the village, even passing by it near the start-finish, path has already been scouted. This course would be an endurance course with the works, speed, obstacles, turns, everything
Green - Village Course
Pros: close to village, watch from your house, exhibits village, small
Cons: might be in the way, things might be in the way of the course, "closes village off"
Notes: I would have to do some logisticy things to make this work, which is not a problem, but I would have to consult practically everyone. This track would be mostly obstacle-free and as flat as possible.

Cyan - Short Alternate
Pros: short, uses front stretch of long course
Cons: trees??? i haven't looked at the elevation around there, so maybe that
Notes: This will be made if the orange one is completed as a shorter alternate. This would probably be an obstacle-filled track that... might have trees on it. Slaloms and hurdles, easy right?
Yellow - starting gates
Notes: I'm not sure where to place it, and these are only valid for an orange/cyan layout, they would be moved closer for a green one, likely.
Most likely layouts: orange/cyan, green, orange/green
If I can get the green layout sorted out tomorrow, then maybe green/cyan is a possibility, but green will be a lot of digging.
