Title: Plans on Custom Solar Color?

Were there any plans to implement the custom color for stars like in the previous game? Where you can change the color of a star.

Yes, we recently added the ability to set custom colors for randomly textured planets, and we plan to extend this customizability to all bodies in Universe Sandbox ².
