Does anyone else have this problem?

you've got me too this problem, you also have problems with gravity?

Yes, it seems like after the materials feature was added, procedurally (:P) generated planets tend to generate with such a high amount of water that all their surface is covered. I guess it could be fixed by changing the random generator to usually make a lower percentage of the mass water (sent a suggestion about that).
Until then you can fix it by decreasing the water content of the bodies.

I'm seeing this as well with the procedural planets. It also seems like the topography is so low lying that it doesn't really break the surface.

No, I'm not sure what the problem is, can you clarify? I was just talking about the problem that the first post mentioned about the water level.

Hi there. Just to give you a head's up on this one. This is a known issue, and it's due to how planets are randomly creating compositions. We're still working on it, and tweaking it. Right now, the water is essentially too common and plentiful.
We'll keep iterating on this as we fine tune the compositions of randomly generated planets. This update (Alpha 7) was putting in a lot of framework to make all of this possible in the first place. We'll need a bit of time to get it all polished up.
