I never tire of watching gravity rip a ring of particles apart.

If you haven't already... Try opening "Earth & Moon" then putting Saturn's rings around our moon.

Full instructions are in Universe Sandbox: From the main menu select "Fun Things to Do" the click "Ring Around the Moon".

Yes... Gravity basically works the same way on a solar system as it does across galaxies.
(And since Universe Sandbox doesn't consider general relativity or dark matter, in Universe Sandbox it does work the same way).
